    What did you cook today?

    I just made some Boston Baked Beans in the pressure cooker.

    And here it is - the finished product!!

    From start to finish!

    A successful hit on the very first try in a pressure cooker!! I think I'll do it this way ALL the time.

    Shaves off & saves hours of cooking time in the oven!! No more waiting hours on end to be able to enjoy homemade Boston Baked Beans!!


    This very same unit was also used to pressure-quick-soak the beans as well, saving hours of overnight soaking!! What will they think of next?!!

    this weekend was my bf's daughters b-day

    she requested crablegs and clams casino, I also roasted garlic for a bagette, ad make stuffed potatos w/3cheeses and broccoli , good idea for the beans, such a long process normally to make, I would only do them once a year for my sons birthday, this procedure will take a load of time off it.

    I had a meeting and social for our Auto Cross Club, it wasn't a pot luck, so I did the snack table. I did the crescent rolls with cheese and ham (served hot), a tray with cheese, celery crackers and hot pepper jam and pickled eggs. I also put dishes out of the various pickles and relishes I do. For dessert I baked a chocolate cake, with cream cheese topping.
    One guy enjoyed my corn relish so much, he bought every jar I have in stock.

    the recipe I have uses the store bought pickled beets in it, with some other things in it and extra vinegar, after a few days the eggs are purple.

    I've been using this recipe for a couple of years ago, found it on the net

    In a saucepan, combine 2 cups vinegar, 2 tablespoons sugar, 1 tablespoon pickling spice, 1 tablespoon pickling salt, 1/8 teaspoon minced garlic, 1/8 teaspoon red pepper, about 6 or 7 dashes of Louisiana hot sauce. Bring to boil; simmer 10 minutes. Cool.
    In a jar, layer 9 small shelled hard-cooked eggs and sliced onion. Fill jar with pickling brine. Cover. Refrigerate 48 hours before using. Keeps 2 months refrigerated.

    I did the pot stickers today for the boys. The filling was very nice i used crab instead of chicken. Personally I wouldn't make the shells myself again, I would buy the ones on sale in the supermarkets. The dipping sauce was wonderful. There was far too much mixture for the amount of shells, I cut out. So tomorrow I'm going to bind the rest of the mixture with beaten egg and do some crab cakes.
    I served veggies roast in olive oil, garlic and parsley and yellow rice as sides.

    Sounds SO good, they must have been delighted. I'll have to go look up the recipe again....
