    Fettucine Mona Lisa Recipe Request

    Hi

    I have tried this pasta at a restaurant and would love a recipe to be able to make it at home.

    The ingredients are: Sauteed Bacon, Sun-dried tomatoes, pine nuts, baby spinach, basil, garlic, hint of chilli. in light cream & napoli sauce.

    Any help weould be greatly appricated.

    Fettucine Mona Lisa Recipe Request

    here is a recipe I have for napli sauce. just add about 1/2 cup of cream (light or heavy, which ever you prefer),about 1/2 cup of bacon cooked and drained, crumble it into the sauce and heat through

    napoli sauce

    You need:
    2 X 400g cans whole/chopped peeled tomatoes
    1 large brown onion finely chopped
    1cup chopped basil and parsley
    1 sprig thyme
    2 bay leaves
    ½ cup white wine
    1 Tbsp brown sugar
    5 finely chopped vine-ripened tomatoes
    2 Tbsp olive oil
    3 cloves garlic peeled and chopped
    salt and freshly ground pepper to
    taste

    Method:
    Heat oil in a heavy based pan. Sautee onions and garlic until softened. Splash with white wine and allow to cook for 2 minutes. Chop canned tomatoes and add to onion mixture along with fresh tomatoes, bay leaves, thyme, salt and pepper and brown sugar. Cook over low heat, uncovered, stirring from time to time, until sauce is thick (approximately 40mins – 1 hr). Remove from heat, add basil and parsley and season further to taste.


    Serving Suggestion:

    Serve with fresh pasta or use as a base to make other sauces. Eg. Capers, olives and anchovies for a Siciliana; chilli and coriander for a thai spicy flavour; sauteed bacon, mushrooms and cream; saffron, snow peas and cream…just to mention a few. Add a spoonful to sauces and gravies for added richness. Add meatballs and spaghetti…use your imagination!!

    Infact when I made this it was for my very first client and they gave it a 5 star. been busy ewver since....LOL..with this client, and became thier private chef!!
