    cheesecake

    hi i was wondering if anyone knows if i have to have a springform pan to make cheesecake i use to have one but i cant find it... does anyone think it would be a problem using a pie pan?

    There's a big difference between a springform pan, with deep straight sides, and a pie pan with more shallow, slanting sides. I would be concerned that your cheesecake would overrun the pie pan.
    You might use a deep rectangular or square cake pan, with fairly deep sides - 2 - 3" . Line the pan with wax paper, allowing two or three inches of the paper to extend beyond the pan. Then after the cheesecake is baked and thoroughly cooled, you will be able to use the wax paper to carefully lift the cake from the pan.
