    Greek Egg-Lemon Sauce

    I would like to know if "egg substitues" can be used in this recipe?

    4 egg yolks
    3-4 tbsp. lemon juice
    3-4 tbsp. hot chicken broth

    Greek Egg-Lemon Sauce

    Yes, but the consistency and flavor will be much different than the egg yolk version. Egg substitute is egg whites with coloring added as a rule. 4 yolks would be approximately a scant quarter cup of egg substitute.
