.....The easiest and quickest way would be a food processer. However, my Mom didn't have one, and she made beautiful relishes. She used a hand-help chopper; a serrated ring about three inches in diameter with a simple handle. I use this item today for egg salad, etc. It's a handy gadget, and won't take up much room in your kitchen drawer. I note that there are many Kitchen Gadget sites on the 'Net, perhaps you can find one here? Good luck!
I use a meat grinder with the largest blade. Some meat grinders don't have a large enough disk to make coarsely chopped vegetables. Kitchen-Aid has a rotor slicing attachment that can be used, too. Or if you have a French fry cutting disk for a food processor, that will help make coarse chunks. You'll need to do a little chopping with a knife after using the French fry blade.
The chopping blade of a food processor tends to turn things to mush or unevenly chopped chunks.
