    key lime pie

    Has anyone tried making a Key Lime pie with coconut milk in place of sweetened condensed milk. I think the flavor would be great, I'm just not sure of the thickening abalities of the coconut milk. Thanks

    Sweetened condensed milk is pretty thick, and coconut milk isn't. I'd make the coconut milk into a pudding using cornstarch and try that in place of the condensed milk.

    You could always use coconut cream instead of coconut milk! Coconut cream is extremely thick; though not exactly like condensed milk, coconut cream will work!
