Zucchini Bread

I am looking for a zucchini bread recipe made with brown sugar and molasses. I had this recipe for years and lost my cook book when I moved. This was an awsome bread. Can anyone help me. Thank You

Take a basic zucchini bread recipe, substitute brown sugar for the white, substitute molasses for part of the sugar, i.e. if you use 1/4 cup of molasses, reduce the brown sugar by 1/4 cup.

This isn't what you asked for but it is a great recipe I hope you will try it.

Zucchini Bread

* 3 eggs
* 1 cup oil
* 2 cups raw zucchini, shredded
* 1 3/4 cups sugar
* 1/4 teaspoon baking powder
* 2 teaspoons baking soda
* 2 teaspoons cinnamon
* 1 teaspoon salt
* 2 teaspoons vanilla
* 1 cup nuts, chopped
* 2 cups flour


1.Put zucchini in strainer and press or squeeze with hands to get excess liquid out.
2.Beat eggs, sugar, and oil together.
3.Add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
4.Mix together by hand.
5.Add zucchini (minus liquid).
6.Beat mixture.
7.Pour into 2 greased and floured loaf pans.
8.Bake 45 minutes at 350°F.
