    Freeze Black Beans?

With the price of canned beans so high I thought I would try cooking the dry beans. Greatfully it made a lot of beans, has anyone had success freezing them?

    Freeze Black Beans?

You can freeze beans in a casserole, soup, or as refried beans.

If you like to use dry beans, get a small pressure cooker (2.5-4 quarts). It allows you to make small batches in 20-30 minutes.

I often make 1/2 lb or 1/3 lb quantities in my small pressure cooker. If I had to cook them for hours on the stove, however, I would cook the whole package (1 lb).

Lentils don't even require a long soaking, about 15 minutes is good enough. Black beans will benefit from an overnight soaking to make them more digestible.

Speaking of digestibility, did you know that in days past, our grandmothers would save a small portion of the bean soaking water to "inoculate" the next batch?
