    Chicken Pasta Salad

    Ingredients:
    Spiral pasta
    Pre-cooked chicken
    Ranch dressing
    Can of green beans

    Preparation:
    Bring a pot of water to a boil. Add pasta and allow it to boil for approximately five minutes. Strain the noodles and put them into a large bowl. Add chicken and a can of green beans. Stir. Add ranch dressing and combine until everything is coated evenly. Serve with cold corn bread.

    Veggie Wraps

    Ingredients:
    Cold corn
    Ranch dressing
    Shredded cheese
    Tortillas
    Bag of salad
    Diced tomatoes
    Diced onion

    Preparation:
    Mix cold corn, cheese, salad, diced tomatoes, and onion in a bowl. Lay out tortilla. Using tongs pile mixture onto the center of the tortilla. Add ranch dressing and fold like a taco. Serve with sliced fruit.

    Turkey Sandwich Wraps

    Ingredients:
    Tortillas
    Sliced turkey or luncheon meat
    Sliced Pepper Jack cheese
    Lettuce
    Mayonnaise
    Mustard
    Pepper

    Preparation:
    Mix mustard, mayonnaise, and pepper into a bowl to taste. Take a tortilla, spread your condiment mixture onto it and top with lettuce. Add turkey and sliced cheese. Roll and enjoy. This sandwich can be served with potato salad, slaw, or chips.

    The Definitive Tuna Sandwich

    Ingredients:
    1 tablespoon lemon juice
    1/4 cup chopped green onion
    2 tablespoons of Miracle Whip
    2 tablespoons soft butter
    3 oz package of cream cheese
    6 oz can of tuna, drained
    Sliced bread

    Preparation:
    Combine your Miracle Whip and cream cheese. Beat it with a wire whisk until it is smooth. Add lemon juice, tuna, and onions. Stir well. Spread a thin coat of butter on the sliced bread before spreading your tuna on the sandwich. Serve with a cold salad or chips.

    Lettuce Wraps

    Ingredients:
    Chopped onions
    Chopped tomatoes
    Chopped turkey or chicken
    Romaine lettuce
    Salad dressing of choice
    Shredded cheese

    Preparation:
    Combine onions, tomatoes, meat, cheese, and salad dressing. Mix well. Lay out lettuce leaves and place a heaping spoonful of mixture onto the center of the lettuce. Roll up into a wrap. Serve with chips.

    Cold Black Bean Salad

    Ingredients:
    1 can diced chili tomatoes, drained
    1 can of corn, drained
    1 chopped onion
    2 (15 oz.) cans black beans, drained
    Olive oil
    Pepper
    Seasoning and spices

    Preparation:
    Combine tomatoes, corn, black beans, onion, pepper, seasonings, and spices in a large bow. Drizzle with olive oil. Serve with a chunk of cheese and bread.

    Hot Dogs for Lunch

    Lunch is usually not a cooked meal when camping, but you can prepare the big brother to pigs in a blanket with little hot dogs in a warm sleeping bag (made out of raw bread dough) when you need something warm on a rainy day.

    Roll a hot dog in a small amount of bread dough (that’s been flattened so it’s about three times the size of the hot dog) and put it into a greased pan. You can add a slice of cheese to the hot dog roll if you like. Once the pan is full of the “sleeping bags”, seal it with foil so there’s a tight seal. Place over hot coals and cook about 45 minutes to an hour, or until brown and cooked all the way through.
