    Camping - Dinners (Chicken & Turkey)

    Mandarin Chicken

    4 Boneless Chicken Breasts
    1 Lg Onion
    1 Lg Tomato
    2 or 3 Mandarin Oranges
    Your Favorite Chicken Seasoning
    1 Sml Bottle Italian Dressing
    4 Zip Lock Bags
    Aluminium Foil


    How to Prepare:
    Butterfly Chicken or place between two pieces of foil and pound thin to speed cooking. Place thin slice of Onion, slice of Tomato and four or five sections of mandarin orange in Zip Lock with Chicken. Pour in some Italian Dressing and squeeze some juice from remaining Orange. Let marinate as long as two days in cooler. Place contents of zip lock into double thick foil packets. Sprinkle with Seasoning and Seal. Cook on coals or on grill for approx. 10 minutes then turn for an additional 5.

    Camping - Dinners (Chicken)

    Campfire Chicken

    Split chicken breast
    Red potatoes (cut in half)
    Carrots (cut in half)
    Onion (cut in half)
    Plum tomato (cut in half)
    Place the above ingredients into aluminum foil sheets, make into pocket. You can add some seasonings (I use some balsamic dressing mix). Bake in the oven or over a campfire. You can also add a small piece of corn on the cob. This is great - it's a I full meal but no pots or dishes to wash. Great for camping.

    Camping - Dinners (Chicken)

    Hot Chicken Deluxe

    2 c Cooked Chicken (diced or shredded - white meat works best)
    1 tbsp Onion (finely chopped or grated)
    2 c Celery (diced)
    2 tbsp Lemon Juice
    1/2 c Almonds (sliced or chopped)
    1/2 c Cheddar Cheese (grated)
    1/2 c Croutons (plain or seasoned - your choice)
    1 c Mayonnaise (salad dressing may be substituted)
    1/2 tsp Salt
    1/8 tsp Black Pepper
    Olive Oil
    Place heavy saucepan on hot coals. Coat onion, celery, and almonds with olive oil and saute' (cook until tender). Drain off excess olive oil. Add the chicken, lemon juice, mayonnaise, salt, and black pepper to the saucepan. Raise the saucepan just above the coals using 2 sticks of similar size. Cook until until hot (approx. 10 mins.). Place the croutons on top of the mixture. Place the cheddar cheese on top of the croutons allowing the cheese to melt before removing from the coals (approx 5 mins.).

    Camping - Dinners (Chicken)

    Chicken-Feta Burger

    1 pound uncooked ground chicken breast
    1 Tbsp fresh oregano
    1/4 tsp garlic powder
    7 Tbsp feta cheese, crumbled
    4 small wheat pita(s)
    4 piece lettuce, romaine
    2/3 cup roasted red peppers, sliced (without oil)
    5 small olive(s), black, sliced (about 4 tsp)
    Preheat grill or broiler. Mix chicken, oregano, garlic powder and feta together in a medium-sized bowl; divide mixture into four balls and then press them gently into patties. Grill or broil patties until internal temperature of burgers reaches 165°F, about 7 to 8 minutes per side.

    Serve each burger in a pita with a lettuce leaf, 1/4 of peppers and 1 teaspoon of olives.

    Chicken & Dumplin's

    Ingredients

    1 LB Boneless Chicken Tenders
    1/2 Bag Carrots
    1 Large Onion
    6 Stalks of Celery
    6 Medium Sized Potatoes
    1 TSP oil
    2 Cans Cream of Chicken Soup
    1 Can Biscuits or Mix up 2 cups of Bisquik Mix

    Equipment
    Dutch Oven
    Spoon for Stirring & Serving
    Knife

    Instructions
    Cut up Chicken, Carrots, Onions, Celery.
    Place Dutch oven on coals, add oil then Chicken. Cook until slightly browned. Add Onion, Celery, Carrots and Potatoes and cup of water. Cover and simmer 15 minutes. Add 2 cans of Cream of Chicken Soup and water to the consistancy of gravy. Cover and simmer an additional 15 minutes or until vegetables are tender. Add bisquits to top of mixture, cook covered 20 - 25 minutes.

    Garbage-Can Turkey

    Ingredients

    TURKEY, SALT, AND PEPPER to taste.

    Equipment

    a 10gal garbage can (perfebly unused) 10lb of charcoal and a 10lb TURKEY a small shovel (for handling hot charcoal) a heavy pair oven mitts a supply of alu.foil a metal rod (about 1"X 20")

    Instructions

    drive stake into the ground, place turkey over rod,and on top of alu.foil (the foil keeps the dirt off) place the can over,upside down. start the charcoal in the lid;when ready place it on top of the can and around the perimeter;wait 1-1/2 hrs (ten mins./lb longer if the turkey is larger) remove the can to find the most delicious,golden brown turkey you have ever seen or tasted!!!!!!

    This not only turns out the best turkey you ever ate; but it also raises a few eyebrows, when you tell them it's a GARBAGE-CAN Turkey!!!!! Enjoy and have fun.

    Chicken Dinner in a Bag

    For this, you need to purchase some Reynolds Hot Bags. At home before you leave for the camping trip, dice your choice of vegetables you’d like to use. You can use green beans, corn, mushrooms or peppers. Potatoes will have to wait until you need them as you don’t want black potatoes in your chicken bag. Place skinless, boneless chicken breasts into the bag, layer on the vegetables and a packet of dry onion soup mix, a tablespoon of flour and 4-5 tablespoons of butter or margarine.

    Place the bag on top of the grill and turn about every 15 minutes until done. If your coals are very hot, everything should be cooked within 30 to 45 minutes.
