    Camping - Breakfast

    Bacon & Hash Brown Casserole

    1 lb. Bacon (cut strips in half)
    1 Small Onion (chopped)
    1 Small Green Pepper (chopped)
    8 oz. Sharp Cheddar Cheese (shredded)
    1 can Cream of Celery Soup
    In a large heavy frying pan, fry the bacon until crisp. Add the onion, green pepper, and hash browns and continue to fry until the has browns are fully cooked (adding a little bit of cooking oil if needed to keep from burning). Then add the soup and cheese and let it continue to cook until the cheese is melted.

    Cowboy Omelette

    1lb ground sausage
    1 chopped onion
    1 bag frozen hashbrowns
    6 eggs
    1 - 16 oz pkg. cheese
    Salt and pepper to taste
    Brown sausage and onion in dutch oven over campfire. Stir in hashbrowns, then add eggs one at a time and stir until well mixed. Add salt and pepper. Cover with cheese. Place lid on dutch oven and cook 10-15 minutes until done.

    Clover Blossom Pancake Syrup

    This syrup recipe is so simple, yet it is so delicious.

    1 Cup water
    2 Cups sugar
    Handful of fresh, washed, shredded clover blossoms

    Combine all ingredients and simmer until sugar is dissolved and it thickens some. You can add a dash of cinnamon also if desired.

    Pancake Mix

    2 Cups flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. salt
    2 tsp. sugar

    Mix all ingredients together. Store in a zipper lock bag or a storage container with a lid. This mix will last around 3 months.

    At Camp

    4 Tbs. Butter
    2 Eggs
    2 Cups Buttermilk
    Fruit, Nuts, or Chocolate Chips (optional)

    Melt the butter and combine it with the Eggs and buttermilk (regular milk will do in a pinch, but buttermilk is by far the best for this breakfast recipe).

    Whisk this mixture very well, and then add this to the Pancake mix from above. Whisk well if you don't like lumpy pancakes. If you like the lumps, then whisk just well enough to form a lumpy batter (this is the way we like it).

    Pre-heat the pan or griddle. You will know the pan is ready when a couple of drops of water "skittle over the griddle." Grease the pan or griddle lightly with butter.

    Spoon or pour the batter onto the hot pan or griddle. Add fruit, nuts, or chocolate chips if you want to. Do NOT try to flip them until bubbles are formed around the edges. When you see the bubbles, then flip them gently and cook for 2 more minutes or so. Serve warm with maple syrup or try our Clover Blossom Pancake Syrup recipe.

    Makes around 12 Pancakes.

    Breakfast Burrito

    Another tasty breakfast meal is a breakfast burrito. This one can be prepped before you leave home and put together at the campsite.

    Cook some sausage and green pepper before you leave home. Store that in a plastic container in the cooler. Also crack the number of eggs you will need (about 1 dozen eggs to 1 pound sausage) and put those in a separate plastic container. Store in the cooler.

    When it’s time to eat, heat up a tortilla, cook the eggs and add the sausage mixture to get it hot. Pile into a warm tortilla and add a sprinkle of cheddar or jack cheese. Roll up and enjoy.

    Stick Biscuit

    Simply pack a roll of refrigerator biscuits in your cooler and pull them out one morning for breakfast. Use your marshmallow stick (or make yourself a new one for this purpose) and roll a biscuit until it is tubular (about 5-6 inches long). Push it onto the stick and set it over the campfire. Cook until the biscuit is golden brown. Remove from the stick and pour squeeze butter into the hole.

    For a delicious but messy twist, add jam to the hole or spread some around the outside of the biscuit. These biscuits are a nice addition to your camp scrambled eggs.
