I would like to purchase a good knife sharpener, but have found so many I'm not sure what is best. Can anyone help me with the decision, especially about electric vs. manual.
Thank you,
Jill

Jeez, I'm going through the same thing you are right now. Now I am useing an old fashioned hand steele.
I have looked at a bunch of sharpeners I am leaning towards a manual device call "Lansky's Universal Knife Shartener". I'll tell you why:
The Lansky universal knife sharpening system comes with three synthetic flat hones for your plain edge blades: course, medium and fine. The fourth triangular ceramic hone is especially designed for serrated blades.
In addition to the four hones, the universal kit comes with blade vice, hone rods, oil, and durable plastic carrying case.
It's at a moderate price range around $40 bucks.
The best thing I can tell you is do your homework to find what will work best for YOU.
The journey of a 1,000 miles begins with a single step.

Here are some good ones take your pick, depends on what you want to spend. Good Luck

In the restaurant where I worked, they liked the Chef's Choice for sharpening, and also a diamond-based "sharpening steel" (restaurant-supply store) for general honing.
