Thread: Fennel

    Fennel

    Maybe it's because I'm from the deep south or maybe I'm just ignorant, but what exactly is fennel? My family has a lot of food allergies and I need to know what family it's from (onions, peppers, etc.) and that it tastes like. Is it bitter? Sweet? Is it always best to buy it fresh? Any help would be appreciated. Thanks! Ignorant in Dallas

    I've never seen Fennel any other way but fresh. It has an annise flavor.

    Fennel

    Fennel is a vegetable plant that sort of looks like celery (but not really!) and tastes somewhat like anise or licorice, but is much nicer and more mild. It's a pretty plant with a fern-like top, somewhat similar to asparagus ferns. It eventually produces seeds that are similar in appearance to dill seeds which are also anise flavored. All parts of the plant may be used, and the seeds are often used in meats, especially Italian sausages.

    The plant makes a bulb and can be thinly sliced to use in salads and other dishes.

    It is used by the Italians more frequently than in other cultures.
