Apple Raisin French Toast Strata
1 loaf cinnamon raisin bread, cubed
1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 1/2 cups half-and-half cream
6 tablespoons butter, melted
1/4 cup maple syrup
Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
Preheat oven to 325 degrees. Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

I make this every yule for my family. I'm not sure how well it will travel but you decide.
1 cup cracked oats (no regular oatmeal or instant or you will have a big bowl of mush)
2 cups water
1 cup apple juice
1 cup cranberry juice
2 cooking apples chopped
1/2 cup dried cranberries
4 TBSP butter
1/4 cup brown sugar
2 TBSP cinn
1 TBSP nutmeg
1 cup candied walnuts or pecans
Combine apples, cranberries, sugar, nutmeg and cinn and coat well.
Spray bottom and sides of 6 quart slow cooker with nonstick spray.
Place the mixture in the cooker and add chunks of the butter on top.
Evenly distribute the cracked oats next and add the liquid. Cook on low for 8 hours.
Sprinkle with candied nuts.
If you like less sweetness increase the water and decrease the juices.
This is a recipe I got from a co-worker a long time ago. It was really popular. Serves about 10 people.
1-1/2 or 2 lbs bulk sausage, browned and drained
9 eggs, slightly beaten
3 cups milk
1/2 tsp dry mustard
1 tsp salt
1/2 tsp pepper
4 slices bread, cut into 1/4" cubes
1-1/2 cups grated cheddar cheese
Mix eggs, milk, mustard, salt, pepper, bread cubes and cheese. Stir in sausage. Pour into a greased 13 x 9 x 2 casserole or baking dish. Refrigerate overnight. Bake uncovered for 1 hour at 350 degrees.
POSTSCRIPT: I've made this recipe myself and I omitted the step about refrigerating it overnight. I didn't much care for the idea of mixing food with raw eggs and then leaving it overnight so I didn't. It came out just fine.

Cook a pound of bulk sausage. Make 2 cups of grits. Spread drained sausage into a casserole dish. Pour grits on top of the sausage. Then make little indentations with the back of a spoon to accomodate an egg in each of 6 spots. Sprinkle with salt and pepper. Grate about a cup of sharp cheddar cheese and sprinkle over top. Bake at 375 until the eggs are cooked to your desired preference.
This is easy and the most comforting and delightful of breakfast dishes. If you want to be totally decadent, add some steamy hot pancakes or waffles with strawberries or bananas. A memorable breakfast! Coffee, or tea plus the always welcome chilled orange juice!
