    Home made pasta - will it keep?

    Hi -If i make pasta, do I have to cook it straight away, or will it keep for a few hours? How should I keep it?Thanks!!

    Depending on the pasta, lay it out not touching each other on parchment paper. It will dry and can be sealed in a air tight container and used several days later.

    When you make pasta you have to let it rest for 30 minutes or so before cooking but if you leave it for a few hours it will begin to dry. This is not really a problem. You will have to adjust the cook time a little but it works. That said the taste is better when fresh.

    If you dry the pasta, it will keep longer, but it has to be fully dried. Italians in the past would dry the pasta in the sun because the ultra violet rays help to sterilize it.

    Commercially, ultra violet lights are often used along with dehydration chambers with low humidities that are difficult to duplicate under normal kitchen conditions. Pasta dough/fresh pasta will keep overnight in the refrigerator, but after that it will begin to turn to a darker color and then it should be tossed. It's a better plan to freeze it. Use bottled or sterilized water if you plan to try and store it and no eggs, and be sure to use a little salt.

    Another good way to store fresh pasta is to cook it right away (al dente), then put it into a plastic bag with a little olive oil in the refrigerator.

    I let it dry completely and then store it in a plastic container. It works fine.

    to use same day toss in flour on cotton cloth and cover with a cloth to keep clean, can sit like this 4or5 hours for next day or longer we take a few old mop handles or wooden dowels size of a broom handel and hook them on to chair backs or between tables and lay the long pasta over it to dry completely. short pasta drys on cotton cloth tossed in quite a lot of flour to keep them from sticking together after itis dry copletely plastic freezer bag and store in cupboard . You can freeze undried pasta to keep it .;;;;;;;;;;;;;;;;;;;;;;;Home made past is fun and you can get creative and add almost any pureed vegg to it for color and extra healthy you really can't taste the veggies so excellent for hiding them from kids and husbands ''''''''Good Luck Have Fun
