Thread: Easy Chicken Recipe??

    I make chicken quesadillas. Easy! Simply cut your chicken into bite size pieces, brown in oil, drain and set aside. Next butter one side of a flour tortilla, place in a med-hot skillet, arrange chicken pieces on one side of tortilla. Then scatter pepperjack cheese in cubes over the chicken. Spoon a little taco sauce over it, too. Then fold the tortilla over and turn over the whole tortilla to brown the other side. Flip it back once more to brown the other side a teeny bit more. Then slide onto your plate and serve with sour cream and chunky taco sauce. I always serve it with a Mexican style rice, and this is very hearty and everyone seems to love it.

    That's a good idea; I love making all kinds of quesadillas, but haven't used this particular combination. Thanks for sharing!

    I do something similar but I add lots of chopped garlic, fennel seeds, and just a pinch of crushed red pepper flakes, and I marinate them for 24 hrs. I always mixed Sweet Baby Ray's with LLoyds until they stopped making it, so now it's just SBR's, it's the best! Plus I use Good Seasons mix it your self using balsamic vinegar, although you don't have to. Makes great wings for a party, too!

    Fast and unusually well flavored, a long time favorite of all

    ORANGE PORK CHOPS OR CHICKEN

    Saute 2 med onions 'til golden brown, then add

    3/4 c. defrosted OJ concentrate
    2/3 c. water
    1 T. lemon juice
    2 T. brown sugar
    1 1/2 t. ginger
    1 t. poultry seasoning
    1 t. marjoram

    Add meat to sauce and simmer 'til done, or pour sauce over and bake 'til done. Meat can also be browned first. Sauce is excellent over rice. I always wondered how some cumin would taste with this...enjoy!

    Try brushing chicken with duck sauce combined with a teaspoon or so of soy sauce and sprinkled with some minced garlic. Roast as usual. Pretty simple!

    Fast,easy, yummy...

    chicken legs
    1 can cream of chicken soup
    dijon mustard
    black pepper
    tarragon, if desired

    Combine all, bake covered 'til tender, sauce great over noodles...

    I make these to, they are Delicious!!
    I do not use the taco sauce though. I use melted cheese!

    This sounds really good! My family likes quesadillas so I'm looking forward to trying this recipe.
