My new favorite "wing it" way to cook chicken: super duper simple and yummy--
Chicken breasts ( I make 4-5)
1 can Rotel tomatoes
1 can other tomatoes (stewed, pureed, whatever is in the cabinet)
Bake in oven until done.
Remove chicken.
Mix in a rich dairy product like half and half, condensed milk, sour cream, or cream cheese and milk. I use what I have in my fridge that needs to be used! Sometimes I add in parmasian cheese to thicken it up a bit.
Serve over pasta.
My kids and husband like it all different ways.

Saute at least 1 Tbsp of minced garlic and about 3 chopped leeks (just the white part, with a little bit of the light green part, but not the dark green) in 2 Tbsp of olive oil until the leeks are just becoming limp, but not browned.
Cut a chicken breast into bite-sited pieces, add it to the pan, and cook until just about done.
Add one cup of heavy cream, bring to a boil, reduce the heat, and simmer until thickened as you like it. If you wish, season with some salt and white pepper, but it doesn't really need it.
This is also very good to serve mixed with some pasta.
My easiest-ever tasty chicken:
Dip chicken pieces in Italian dressing, roll in seasoned breadcrumbs, bake @ 350° 'til done.
You can add garlic powder and paprika to the bread crumbs if you like.
Chicken always benefits from soaking overnight in salted water, milk, or buttermilk before it's cooked.

Pound your chicken breasts out before starting, this will make them more tender. put some salt and black pepper it.Place ham on one side and cheese on the other of uncooked chicken breasts and close it. After doing this, drop into first beaten eggs and after bread crumbs.
pound the end of the chicken to avoid it open ,
heat oil and fry the chickens till they get golden.

1 kg chicken, chopped

3 green peppers

For Hünkarbeğendi

6 pieces of eggplant
1 tablespoon flour
1 cups milk
2 gl cheese

Put butter into pot. Add chooped onions,green peppers,garlic,tomatos,tomato paste and gently turn,and add also salt and black pepper. after some min add chickens and cook it for 10 minutes. On the other side of eggplant are grilled over a fire or oven tray. melt some butter, add flour a tablespoon,cook it a bit and while you are adding cold milk,keep mix it till it get a bit solid. after our Béchamel sauce s ready add roasted and chopped eggplants and 1/2 gl of cheese, salt and mix it ,andddd it s ready. if your chicken also cooked..lie chickens in a tray and your hünkarbeğendi on it and add top your cheese.
cook it in oven till the cheese get brown..
Chicken with vegetable
Ingredients
500 gr chicken(cut in small chucks)

2 red bell pepper

I put in a bowl all chikens , put on it all spices and salt and mix and an let chiken to get all of them s smell and taste.. while it is waiting with spices , i cut marrow,carrot,bell peppers,garlic in small pieces. i put butter on fire and added vegetables on it, put salt , and let it cook for 5 min. after i added chicken and cooked for a few min more, i melted tomato paste in 2 glass of hot water and added o my chicken , i cooked it around 30 min.. u cant guess the result, perfect smell into kitchen and perfect taste..

I have an easy chicken recipe that has become a favorite in my family. I use chicken breasts and I pound out the thickest portion of each breast so they cook evenly. I coat the chicken pieces in Ranch dressing and then dip them into seasoned breadcrumbs. I cook them in a skillet using 2-3 tbsp margarine (depending on how many portions you're cooking) on low heat for about 6-7 minutes per side. If you have the heat too high, the coating will stick to the pan and come off.
My family loves chicken nachos. I cut up chicken breasts into bite size pieces, sprinkle a little garlic powder on them and place in a pan sprayed with Pam. Cook on medium heat to cook throughly. When they are done sprinkle on some chili powder (we like a lot). Stir well, coating all pieced. I then add bell peppers and onions and cook until vegtables are tender, but still slightly crunchy. Serve over tortilla chips with jalapenos, sour cream, cheese topping. [I make mine with a little milk and white queso processed cheese with jalapenos , (product similar to velveta loaf, I buy at Kroger.)]

INGREDIENTSPreparation
- 2 1/4 cups chicken stock, divided
- 1 cup Texmati rice or white rice
- 1 small bunch scallions, thinly sliced on an angle
- 1 large bundle broccolini,or regular broccolini trimmed and cut into 2-inch pieces
- 1 1/2 pounds boneless, skinless chicken, white or dark meat (3 pieces breast or 5-6 thighs)
- Salt and pepper
- 3 tablespoons high-temperature cooking oil, such as canola, safflower or peanut, divided
- 1 inch ginger root, grated or finely chopped
- 3-4 cloves garlic, finely chopped
- 1/3 cup Tamari, soy or low-sodium soy sauce
- 1/2 cup orange marmalade
Bring 1 3/4 cups stock to a boil. Stir in rice, cover, reduce heat to simmer and cook 15-18 minutes until tender. Add the scallions and fluff with a fork.
Bring a few inches of water to a boil for the broccolini.
Meanwhile, thinly slice thighs or, if using breast meat, butterfly each breast into cutlets, then thinly slice. Season sliced chicken with salt and pepper.
To boiling water, add some salt and broccolini. Parboil the broccolini for 3-4 minutes then drain, run under cool water and reserve.
Heat 2 tablespoons of oil in large nonstick skillet over high heat. To the very hot pan, add chicken and stir-fry until golden, no more than 5 minutes. Remove chicken to a plate and reserve. Add remaining tablespoon of oil to the pan, along with the ginger and garlic. Stir 30 seconds then add soy, marmalade and remaining 1/2 cup stock. Add chicken and broccolini back to pan to heat until sauce is thickened.
Serve chicken and broccolini over rice.

This is simple! My whole family loves this.
Marinate the chicken breasts at least 6-12 hrs. for best taste with Italian dressing.
Put in oven for around 35-45 min.
I also use Sweet Baby Rays' BBQ.
