    How many people does 1 lb. of sloppy joes feed?

    We are having a potluck at work and I'm making Sloppy Joes using 1 can of chicken gumbo for each lb. of beef (and adding brown sugar to taste). I'm thinking there will be about 30 people eating. About how many lbs. of ground beef should I use?

    I make sloppy joes using only ground beef, and I use 1 lb for 2 people, I dont know what canned gumbo is but would assume there would be 2 servings in one can and then 2 servings in 1 lb of ground beef.

    Hi joanna,
    you can use 5 lbs of hamburger if you like, adding the gumbo,and tomato sauce just let it reduce down, and also a tip if you have a crock pot put it into that after you cook it all together and then just keep it on low and it will cook further and you can carry pot and all to your lunchen,
    some people will have the joe's and others won't, but that should suffice for your need.

    One general "rule of thumb" is about four or five ounces of beef per person. Of course, that is based upon having other things in the meal, and also will depend upon the appetites of the people involved. Lot's of people, for example, enjoy full-pound hamburgers AND the fries, etc. Thus, when planning something for a group, you should probably plan on having extra (though not TOO much extra), rather than too little, so you should probably base your calculations upon six to eight ounces per person, unless there will also be sufficient extras for people not to eat as much of the Sloppy Joes.
