Cleaned and cut wax beans (yellow beans) should be put into
a strainer, collander, or wire basket and plunged into boiling
water for two minutes. Lift them out of the boiling water and
immediately plunge them into ice water for an additional two
minutes. Drain well on paper towel and pack in a convenient
package or rigid container.
The reason for this process is to stop the enzyme action
which causes the vegetable to mature. It also softens the
vegetable making it easier to pack. Use one gallon of boiling
water for one pound of non-leafy vegetables. Two gallons of
boiling water for one pound of leafy vegetables.
