does anyone out there know how to stop a cheesecake from cracking and splitting? help please
I've never been concerned about my cheesecake cracking, because I always put a topping on, and no one sees it. However, a friend of mine said she learned from her pastry chef friend that she should turn the oven off 10 minutes before the baking time says, and leaves it in the oven to cool. The left over heat from the oven will finish cooking the cheesecake, and the slow cool down will prevent cracks. I thik she also said something about putting a ovensafe dish of water in the oven as well.

I always as soon as i take the cake out of the oven run a knife around the top of the cake so that it doesn't stick to the side when cooling causing the top of the cake to fall and crack, this always works well for me. but knightmoves tip is another great one. I'm gonna try that,as i have found the cheesecake factory cheese cake and will try on that one.
remember,STRESSED spelt backwards is "DESSERTS"
