    fig preserves

I have downloaded your recipe for fig preserves. It says to use soda. Baking soda, club soda or cola soda. I know it's a dump question but I have alot of figs to take care of. I believe it is the juice of a lemon also. Can I use bottled lemone juice and how much. Thanks for your help. Should I use the real ripe figs for sauces? I have alot of them too. I'm going to pick my figs now.
Thanks for any help you can give.

    fig preserves

    hi Nadine,
1 lemon can equal roughly 1/4 cup of lemon juice, and yes you can use bottled lemon juice,my suggestion is to use the "realemon braand it taste like real lemons,. and yes you can make a sauce out of your figs just peal them or just quarter them and add a little lemon juice , sugar honey, depending on the sweetness and cook them just like apple sauce, add a little water with them as well.
    hope that helps you out
another use is to make cake like cookies and make up your figs (like apple sauce) and sandwich the cookies together like fig newtons,,,

    remember,STRESSED spelt backwards is "DESSERTS"
    happy cooking
