I found a recipe here for fig preserves that calls for sprinkling the figs with soda, then adding boiling water and letting them soak for one hour. Does anyone know what the purpose for the soda and the soaking?
soda is used to break down the tissues in the fruit along with the lemon juice if any. some recipes call for soda in the recipe so rather putting it directly into the first mixture they put it into the fruit to disolve the soda first so it doesn't clump in the recipe for distubution properly.
