Of course, the list could be almost endless, depending upon the types of cuisine you plan on cooking, but I can't be without:
Allspice
Cardamom
Cayenne
Chipotle pepper powder
Cilantro
Cinnamon
Coriander (the seeds of the cilantro plant)
Cumin
Curry powder
Fennel seeds
Garam Masala
Garlic
Marjoram (I prefer this over Oregano)
Paprika
Rosemary
Sesame seeds (even more important for me: Sesame oil)
Thyme
White pepper (great in mashed potatoes or macaroni and cheese, where you don't want to see all the specks of black pepper)
Of course, there are many others, but those are my most-used essentials.
