Here in Honduras, a number of people make a delicious wine from the flowers of the hibiscus (a delicious tea, as well). I know next to nothing about making wine, and have scoured the Internet for recipes, but the only things I could find were so technical ("primary," "secondary," "airlock," etc.) that I know the locals have none of these things. Although I will be trying to ask around for ideas from the locals, do any of you have any hints or recipes on how to accomplish this with bare-bones, common, home-kitchen equipment and in an area where the winter temperature ranges from 75-85? Yes, we have refrigerators, but nothing that could be dedicated to being kept at 65-75, and these people DO manage to make this wonderful wine somehow.

Any ideas?
Thanks!
