    peeling potatoes

    Is there such a thing as peeling potatoes quickly?

    Relatively speaking, yes, but I've never mastered it. When I used to work in a restaurant, the prep cooks who took care of peeling the potatoes were like lightning with them. They used peelers that were shaped more like cheese slicers (or slingshots) than pencils (the configuration most commonly seen in stores). Even so, when I tried using their peelers, I still could never be as fast as they were. My problem was holding onto the potatoes, especially after the first couple of peels, when they would become slippery. Those guys, however, never slipped a bit, so either they have rougher hands than I do and/or it just takes a lot of practice.
