    Homemade Lasagna Noodles/Pasta

    Hi,

    I have a question to all out there. I made homemade lasagna noodles for the first time. I usually don't dry my pasta before using it, but I had heard that one "should" let it dry for an hour before using. I didn't pre boil it before using it, and I didn't like how it turned out. If one is using fresh homemade lasagna noodles, do they need to dry it at all? Or, is a little boiling necessary. I like the super thin pasta I can make at home, and then use several layers. Any tips would be appreciated!

    When I have made homemade noodles I boiled them right away and they turned out great

    You might try a par boil on it. And then make your dish. What was it that you didn't like about the way it turned out. I always use them dry in the dish so they dont get over cooked. Pastas were dryed out for preserving purposes. Fresh pasta, and dry pasta are two different animals and must be treated differntly. When using fresh I would adjust the moisture in the other ingredients so as not to have to much.
    Dry pastas need a little more moisture in it to make it work with out having to boil the noodles.

    you can dry the noodles but when you do boil them add a little oil to the water.melody1

    Adding oil to the water does 2 things, one good and one bad. The good thing it does is it helps to prevent the foamy boil over. The bad thing it does, and this is important when cooking pasta like twists, rigatoni, penna,fusilia, is it prevents the sauce from sticking to the pasta when done and served. Other then that it really doesn't have any benifit to cooking pasta. Just something I picked up over the years.
