I have a butternut squash recipe that says to pour ingredients in a greased 1 1/2 qt. casserole dish to bake in oven...can I use my non-stick loaf pan or will that change the way cooks?

Most casseroles aren't very fussy. The two main factors will probably be the difference in the depth of the ingredients and in the material from which the pan is made.
When the ingredients are put into a casserole dish, they are usually shallower, and spread out over a wider area. The loaf pan will probably be narrower and deeper.
Likewise, a casserole dish is usually Pyrex, or the like, but the loaf pan is probably metal. The metal of the loaf pan will conduct heat to the outer portion of the contents more quickly than the casserole dish would.
Thus, you will probably have to keep an eye on it to make sure the center gets properly done without the edges getting overly done. It may also help to use a slightly lower oven temperature with a longer cooking time. Other than that, it would probably be okay. After you've done it once, make a note on the actual recipe to remind yourself of any adjustments you made, or any time difference.
