    Converting large serving recipe to small

    I have a recipe from a school. How can I convert the recipe measurements from 560 portions to 35 portions?

    Converting large serving recipe to small

    Divide 35 by 560 the resulting quotient will be your new multiplier .0625


    Multiply each ingredient by .0625 to get the new quantity you will need.

    The only exceptions to this application is seasonings and individual pieces of meat. If you need to serve 35 chicken breast then use 35 breast portions. seasonings are most affected when increasing a menu,.

    If you come up with a partial egg, use a whole one.

    For the bloke that needs to reduce an ml. try adding just a drop or two to your recipe.
