Make more pickling juice! Add pickling spice to some vinegar, and add the other ingredients you used in the original juice. If you have a jar of pickles with a compatible flavor, use some of the juice from the jar.
My deviled egg recipe is somewhat unique. I boil and slice the eggs in half, of course, then mix the yolks only with some prepared mustard (standard or dijon) and lotsa garlic! The eggs tell me how much mustard is "enough," because the mashed yolk forms a kind of rubbery "dough" and holds together. Then add the garlic, S&P. Add only enough mayo to make the mixture smooth and easy to spread or spoon out (or pipe) into the "cups" made from the whites. A sprinkle of paprika is attractive. You can embellish on this by adding whatever you like to this yolk-dough. Some minced anchovy, or chopped nuts, capers, finely-chopped pickle or onion - the options seem to be endless. You can also garnish each portion with a slice of something edible, compatible and attractive, like olive or tomato slices. But the recipe is great, on its own, and I've never served them and had to worry about putting up any leftovers!
