My mother asked whether she should order a Tom turkey or a Hen. I've heard about different preferences, but don't know actually what's the difference. Anyone?

When selecting your turkey, make sure that the plastic wrapping isn't torn. There's no big difference between males (toms) and females (hens), but it's more economical to get a big bird, since a 15-pound turkey has about twice as much meat on it as a 10-pound turkey
I purchase my fresh turkeys at a local turkey farm. On Wednesday I had this discussion with a sales person. Apparently, the Toms and Hens weigh about the same, but the Toms have more meat in the leg and thigh and the Hens have more breast meat.
Hens or Toms: It may surprise you but the only real difference between a hen and tom is the size. Hens are classified under 16 pounds and toms are over 16 lbs. A somewhat secret cooking tips tricks is that both will be a young turkey, just a few weeks old at the time of processing. They will be equally tender and moist

I saw a report on the 6 pm news tonight that spoke about "Heritage Turkeys" that were completely different than the ones that we get now (generated in the 70s) can you share any information on those?

both are the same except that the hen is the younger of the two.so if it's a hen it's younger and if it's a tom it's older.
