    lemon juice and fish marinade

    I found several recipes for dorado (mahimahi) fish at cooks.com that I would like to try tonight. Many use lemon in the marinade. I thought that lemon should not be added until serving over the fish as it will toughen the meat. Does anyone know if that is true?

    no it is not true. I have made many many fish recipes using lemon in the marinades. infact I just did a catering party using a lemon marinade. I wouldnt marinade the fish overnight tho. at least 6 hrs before grilling. If youre worried about the outcome or toughness you could prepare the fish as directed then add the marinade last hr of grilling or cooking.or perhaps you can make lemon zest and add to your marinade.
