I would like to know what to do with leftover tomato juice I have from making salsa. We didn't get the right kind of tomatoes and we are left with 44 cups of juice we drained from our tomatoes. Any help would be appreciated.

how thick is the juice? what I've done with mine before is I canned some and made it into a good tomato base broth for minestrone or any italian soup,bloody marys,speghetti sauces...etc...even added it to my tomato soups.

it's pretty runny, should I cook it down a little and add anything too it.

adding some tomato paste will thicken it up. depending on how thick you would want your sauce will determine how much paste to use.I have added fresh garlic, some garlic salt and pepper, italian seasonings, small onions, chopped mushrooms, etc to make my basic tomato sauce. I can give you a recipe to try if you like.email me at my addy and ill get it out to you.

i sent you a few recipes to look at. I havent done any canning in a while
so I did find this site in one of my fav tomato recipe files and have used.
take a peek thru here and see if theres anything you can make or that
interests you. I would imagine you could just put the juice in a jar. I do
remember boiling the jars and lids for about 5-min in a hot water bath,
take the jars out and added the tomato liquid with a garlic clove
(leaving about a 1/4 in head space) and seal. I put the jars onto a towel
and just let the lids do thier thing....lol..then stored them in my pantry.
I only have 2 jars left and they are dated from 97..lol..
