    I would like to find a recipe for Pickled Kielbasa or Sausage

    Pickled Kielbasa

    Here are a few I found on a google search.

    Pickled Polish Sausage

    2 lbs. Polish sausage (Kielbasa)
    3 med. onions
    5 carrots, scraped and sliced
    1 cup water
    2/3 cup brown sugar
    3 cup white vinegar
    2 tsp. crushed red pepper

    Put sausage in a jar with sliced onions. Use cooked sausage and don't
    re-cook. Boil rest of ingredients and simmer 5 minutes. Pour over sausage
    and let set in refrigerator 2 days before serving.




    Pickled Sausage

    onion
    1/2 cup sugar
    3/4 cup vinegar
    water

    Use ring baloney, smoked sausage or any type of sausage that is already
    cooked. Peel off skin and slice into 1/4 inch slices and start a layer of
    sausage in the bottom of a quart jar. Add a layer of sliced onion cut into
    the same thickness. Continue until jar is filled with layers of onion and
    sausage. Pour on the "brine" until everything is covered. Mix 1/2 cup
    sugar with 3/4 cup vinegar in a 2 cup measure. Add enough water to make 2
    cups. Stir thoroughly until sugar is melted. Brine will be tart but meat
    and onion will absorb that. Store in refrigerator overnight keeping
    covered. Keep in refrigerator.




    Pickled Sausage

    Cooked smoked sausage is pickled in a red brine for an irresistible
    indulgence.

    Prep Time: approx. 5 Minutes.
    Cook Time: approx. 5 Minutes.
    Ready in: approx. 48 Hours
    Makes 20 servings.

    8 cups water
    5 Tbsp. salt
    8 cups distilled white vinegar
    15 drops red food coloring
    20 links smoked beef sausage

    In a large pot over medium-high heat, combine the water, salt, vinegar,
    and red food coloring; bring to a boil. Cut the sausage links into halves
    or thirds, depending on size, and place into a large sterile jar. Pour the
    hot vinegar mixture in with the sausage, secure the lid, and let stand for
    2 days before serving.
