Anyone out there who hasn't tried a good Santoku knife is missing out. I first saw Rachael Ray using it on Food TV and wondered about it. So I purchased one. There IS no other knife now. I highly recommend obtaining one at least to try. Don't buy cheap, either. If you're into cooking, spend the money - you won't regret it. Good wieght and balance is important when using this knife, but you'll thank me after you try it. Mine is a J.A. Henkles and I absolutely LOVE it.
Where can you buy the knives?
I have a problem with my knives, they always stain and rust. I got a very good set of Faberware knives for a wedding present and a year later had to throw them away because they were stained and starting to rust. Keep in mind the knives were stainless steel. Well when I went to a home show I bought a set of knives and they are also stainless steel but they are starting to stain badly.
I am afraid to spend alot of money on knives because they get stained and then start to rust.
Any suggestions would be appreciated.

Don't wash your knives in the dishwasher. It will really spot them up. Just handwash and they will continue to look new....
