Anyone out there who hasn't tried a good Santoku knife is missing out. I first saw Rachael Ray using it on Food TV and wondered about it. So I purchased one. There IS no other knife now. I highly recommend obtaining one at least to try. Don't buy cheap, either. If you're into cooking, spend the money - you won't regret it. Good wieght and balance is important when using this knife, but you'll thank me after you try it. Mine is a J.A. Henkles and I absolutely LOVE it.
