I keep coming across recipes that call for "chop suey vegetables" does anybody know what vegetables are in a can of chop suey veggies. I live in Italy and cannot find them here....

Mung bean sprouts, bamboo shoots and sliced water chestnuts. You could also add snowpeas (mange tout), baby corn, cut in one inch pieces, as your preference allows.

You can make up your own chop suey mix as Mrs S suggests.
I add celery slices (cut on the slant), broccoli, chinese cabbage (both bok choy and nappa style), mung bean sprouts, snow or sugar snap peas, minced fresh ginger, sliced water chestnuts and bamboo shoots, sliced mushrooms and red or green peppers, and sometimes even thinly sliced savoy cabbage. Zucchini slices sometimes, if you have it! Even broccolini. About the only thing that doesn't fit here are potatoes and tomatoes.
Use whatever vegetables you like and what's fresh.-Belle
One note, chop suey, Chow mein, And lo mein are all basically the same. The difference is the starch. respectively, Rice, fried noddle and choice of pasta. The first 2 I would use a thickener as in corn starch the last I would leave a bit thinner to coat the pasta.

we dont have chinese vegitables but i am italian and i like chop suey and other chinese dishes
we use
string beans
carrots
cabbage-red and white
onions
snow peas
zuchhini
even egg plant
you just have to cut them right way--strips
not slices
i think the most important part is the sause
and the spices
you could use any vegitable available
