    Turkey Dressing

    Please help! I am a good cook, but my family turns thumbs down on my Thanksgiving dressing. Their complaint: they want dressing that holds together and does not break apart into bread cubes. How much liquid can I add without the dish becoming soggy? Would I be better of shredding the bread instead of cubing it?

    Hi there. I live in Canada and we just had our thanksgiving. I add a fair amount of water to my bread and its not soggy. It should not matter if your bread is cut in cubes or torn into pieces.I cut mine in cubes my Dad always tore his up. Neither of ours ever broke or fell apart. You may have to experiment a bit to get your stuffing as moist as you like it but for 1 loaf of bread I use about 1 to 1 1/2 cups of water. I hope this helps.

    I use milk or chicken broth to moisten the bread cubes. If I am stuffing a bird I use less but if i'm cooking a loaf pan or two extra I will make it a bit more moist to allow for the drying effects of the oven.

    also, try using 7-up. My mother's trick. The 7-up or Sprite contains carbonation and of course, a bit of sweetening, which is not really that noticeable. I've never had my stuffing break apart when using these liquids. Good luck. Rick.

    If you are not cooking the stuffing in the bird, use butter, eggs and milk or chicken stock to moisten the bread cubes. The bread can hold quite a bit of liquid which will evaporate while baking in the oven. Don't mix it so much that it crumbles and falls apart. Also don't add so much liquid that the mixture is floating in stock. The eggs act as a binding agent to hold things together. The butter if for flavor. Bake at 350 until crusty on top.

    I love turkey dressing...I will have to do one of these recipes myself....its definitely one of those thing i have a hard time making.
