Goulash... sounds crazy, but goulash is a leftover-lover's dream -the Basics: elbow macaroni, some sort of tomato base sauce, some sort of meat (ground or cubed), a veggie, and sometimes some cheese(s).Plus this freezes very well if you don't boil the elbow macaroni too long, but you'd want to specify to add some moisture when reheating. This idea is so fool-proof I can get my way-too-picky-eater to eat goulash in whatever combination. He ate (whatever leftovers i use) first time around, it's just mixed diferently now. Not all the ingredients have to be leftovers. ... for example Tex-Mex goulash: taco meat, corn, beans (black or pinto) about 1 c. tomato sauce or juice or salsa, and shredded cheese. Garnish servings with whatever left-over taco-like toppings you have... Made too much spaghetti sauce? Use spaghetti sauce, mushrooms, cottage or ricotta cheese, parmesean cheese, whatever green cooked veggie is hanging out in the fridge and presto! Gourmet Italian Lasagna goulash! i think you get the idea :)
also lots of things you can add to left over rice...yumm!
