    potato salad

    I under cooked the potatoes for my potato salad and I want to know if I can bake the potato salad to soften the potatoes. Thanks

    i would stick them in the micro wave covered with saran wrap on med-high for a few seconds depending on how hot your micro gets. see if that helps! ever try making hot german potato salad thatz good too!

    potato salad

    When I've accidently overcooked the potatoes for potato salad, I make an Italian potato salad instead because you don't have to stir it around to mix it as mush.

    Fluff up the potatoes lightly from the bottom of the pan using a wide spatula, then sprinkle with a little wine vinegar and olive oil mixed with oregano, parsley, and granulated garlic or garlic crushed in a mincer. Toss on some finely chopped red onions (you might want to soak the onions in the vinegar first to take the edge off).

    You can also add chopped sauteed bacon if you have it.

    Sprinkle with hot red pepper flakes and serve.
