Thread: shrimp batter

    shrimp batter

    I made the batter as per directions on the batter box, then I tried making my own receipe batter and when I deep fry the shrimp the batter does not stick. what am I doing wrong?

    Wet sticks to dry, dry sticks to wet. Very important to remember this any time your working with a batter. So shrimp dredged in flour first then the wet batter. If you are making a dry wet dry batter like fried chicken let it set in the fridge for half an hour and it will hold better.

    Secret is to dip wet then dip dry then dip wet then dip dry again. Now, let 'em set for a good 10 to 15 minutes or so. It'll stick then, I promise.
    If you're using an all wet batter, I can't help you there. I never use that anymore. It never worked for me.
    If you're using a batter in a box, I shudded to think what's in it.
