    New mincing knife

    It's been quite a long time since I bought myself a new knife. Have been happy with the ones I already own, and am generally reluctant to buy specialty items that won't be used very often. But I've thought about getting a mezzaluna for quite a while, and when I saw this double-bladed one from Henckels at a great sale price I just couldn't resist it. I have a Henckels chef's knife that's served me well for years, and this was a $70 knife on clearance for only $25. It looks like a pretty little modern sculpture and it rocks, if you'll pardon the bad pun.

    I would love to have a mezzaluna. can't seem to mince garlic by hand.

    Yes, but I never think of it unless it's ginger. I get myself frustrated with trying to mince like a chef with just a knife. Maybe just lack of patience.

    K. is right on with the microplane grater. It does a great job for garlic. I have mine hanging over the stove because I use it so much. Karen, you sound like me. Out of site out of mind. Even then I sometimes don't see it.

    I've recently seen Joanne Weir "mincing" garlic with the back edge of her knife...seems kind of strange but it apparently works. Anyone else tried this method???

    Yes, that is the way we used to do it. Smash it with the flat part of the knife add a little salt and keep mashing it to get a smooth paste. To much effort now-a-days.

    Yah, I've seen those in several versions, including one with five or six rolling blades. Must make quick work of it! There's a little clear plastic gizmo these days with blades inside the snail shell, too. Specifically for garlic, looks like a child's toy, hinges open. I'd sort of wanted a mezzaluna for some time- mine was an impulse purchase. But I like it. Another favorite I bought on impulse years ago and became very fond of is a Pepperball one-handed pepper mill. Always right there within handy reach when I cook.
