I usually refrigerate the dough for a while or overnight before I bake them. That seems to help.

Yup, I agree. I always make my dough early in the day, or a day or two beforehand. Roll it up in wax paper in a log and keep it in the fridge. When I get ready to bake my cookies, I just slice them thick like "slice n bake" cookies. Have your oven preheated, they come out great!

here is a recipe I use alot!!
    kph

    The Chewy

    2 sticks unsalted butter
    2 1/4 cups bread flour
    1 teaspoon kosher salt
    1 teaspoon baking soda
    1/4 cup sugar
    1 1/4 cups brown sugar
    1 egg
    1 egg yolk
    2 tablespoons milk
    1 1/2 teaspoons vanilla extract
    2 cups semisweet chocolate chips

    Hardware:
Ice cream scooper (#20 disher, to be exact)
    I use just a reg scooper..lol..
    Parchment paper
    Baking sheets
    Mixer

Heat oven to 375 degrees F.
Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside.

Pour the melted butter in the mixer's work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.

Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.

If you like the taste of your cookies, try adding more flour than the recipe calls for which should affect the consistency.

How to make Soft and thick chocolate chip cookies

This is the best chocolate chip cookie recipe that I've ever tried! This recipe makes plump, soft cookies that will be eaten in no time!

    "Chocolate Chip Cookies"

    Whisk together and set aside:
3 1/4 cups all purpose flour
    1 t. baking soda
    1 t. salt
1 small box of vanilla instant pudding

    Cream "wet" ingredients:
    1 cup sugar
1 cup dark brown sugar (you can use light brown, but dark brown taste better)
    2/3 cup butter or marg.
    2/3 cup shortening
    2 eggs
    2 t. vanilla
    +
    2 cups semisweet chocolate chips
    1/2 cup milk chocolate chips

Stir flour mixture into creamed. Itís easier if you just use your hands to mix it all up! I roll the dough in my hands to form the balls, rather than "spoon dropping" them.

Bake 11-13 min. at 350 degrees.
    *Makes 6 doz. cookies

How to make Soft and thick chocolate chip cookies

I always use about a T less flour than the recipe calls for
I also use brown/turbinado sugar instead of a mix brown/
    granulated
    I replace 1 egg w/ 2 egg yolks
Make sure that your butter/eggs are at room temp
When baking, don't bake them all the way, this will give you
a nice soft cookie (I wait until they're fluffy in the oven,
    golden but not quite brown)
