I made brownies the other day and stirred 1/3 c. peanutbutter in the batter before baking. I LOVED them! Needless to say, they went fast. Next on my list is zucchini-pineapple bread. Dunno how that will turn out, but I have heard good things about zucchini bread. I thought with the addition of a can of crushed pineapple it would HAVE to be good! Hahaha! We'll see.

I had a lady at work go on and on about how good her zucchini bread was. I didn't tell her it was the worst I've ever eaten!! She ground up the whole zuccini, seeds and skin, it might be ok for baby zucchini's, maybe. But her bread had awfull chewy chunks in it. I only use the white flesh of the zuccini, I did tell her that though. Pineapple sounds good, I've used applesauce in mine and always lots of cinnamon.

No, I don't think so. The zucchini is a lot like carrots in carrot cake. Makes the cake moist. I was under the impresion that the seeds and skin are garbage, and you only use the white fleshy part of the veg. Her bread was the first one I've seen that used the whole thing. Yuck, I don't reccomend it.

I had a couple ripe bananas sitting around so I toutht I'd make Banana Bread tonight. Threw it in the oven and started doing the dishes and realized the bananas were still sitting on the counter! Yanked it back out of the oven smooshed up the bananas and threw it all back in the pan, I never said a word to the familly, SHHH, it's our little secret. DOUGH!!

No, I was fine, lots of vitamins!! Gack : PThe banana bread from last night tastes fine but it does have a few pea sized air pockets that it normally doesn't have. Oops, not a total loss the kids won't care.
