How can I use left over Crown Pork roast in a casserole?

Hi! I cook alot of pork but never made a crown roast, You could try a "chili" type casserole, mix the meat in w/ beans, rice, canned mexican tomatoes & other spices, then top w/ cheddar or pepperjack (or a combo).
