I am making a packaged Swiss chocolate cake and only have olive oil, extra virgin olive oil , and sesame oil. I don't want to use applesauce. Can I use any of the others I listed?

olive oil will alter the taste, when I have found myself in a jam like you I have melted buter or crisco and substituted it, use the same amount as the recipe calls for.
I hate to disagree with Kookie, but I use olive oil almost all the time in my cake batters. There even is a great tasting cake recipe using olive oil. I would not use the x-tra virgin as it probably has a more distinctive taste, but the regular should be fine. The chocolate will cover any taste if there is some.
I believe that both Lidia Bastianich and Maryanne Esposito have done the olive oil cake on their shows, but I haven't checked our own recipe search yet....
I would taste the oils, and use the most mild flavored oil. I would NOT use the Sesame oil, way to strong of a flavor.
It was Lidia's cake recipe that I made, but I don't know where I put it . It was wonderful. If you have it, maybe you can post it for us. I have not searched anywhere yet for any olive oil cake, but I did make Lidia's a few times and I remember that everyone really liked it. My old brain did not even remember who's it was until your post. So thanks.
Hi again K, I just thought of something this morning regarding the olive oil in cakes. I had a cookbook by Patricia Wells. She is a French Chef/Author and she made a fabulous champagne grape/olive oil cake. It was one of the most wonderful cakes that I have ever eaten. I lost the book when my basement flooded, but now that I remember her name, I will try and get another. This post should go under the cookbook posts, but until I find which book I had or like best, I thought I would post here.
Patricia Wells is a true queen of cooking, she just knocks my socks off every time that I see her on TV, kind of a current Julia Child....WOW!!!
