    What is the best method for poaching for benedict? I have swirled the water used vinegar but I cannot achieve the perfect poached egg....(say that really fast) lol

    If you are swirling and using the vinegar, I think you must just need practice. It takes awhile to get the swirl down. Maybe there is a video online that shows the right swirling movement. I let my egg sit for about 10-15 seconds and then slowly move the spoon around the loose whites and then start the swirl moving slowly. But I think you just may need practice.

    prefer a spoon or ladle? I just saw a program where they actually put the egg into a ladle and immersed it into the water, they make it look so easy,lol

    I cheat. I use a non stick poacher. So much easier.

    My mother used to have an egg poacher that consisted of four little cups that were suspended on a rack lowered into the simmering water. Would small aluminum cans placed directly in the water work just as well?

    tuna or salmon cans or pyrex small bowls. be sure and grease them a lot.

    When I would have to fry eggs for breakfast sandwiches at work I had a somewhat larger can ring that fit the bagels perfectly, no more ragged edges hanging out, much neater and easier for the customers to eat...

    It IS a difficult thing that sounds easy but takes practice. I use a spatula, a flat one like you use for turning pancakes. It works nicely. Don't swirl the water too rapidly and be sure it swirls gently as you drop the egg in.
