A new neighbour of mine who has just moved over from Chicago asked if i could make Chicago Hot Dog relish. I found a recipe on the next last night and made a batch today. When I look at the relishes that are for sale on the internet, they are a vivid green. Mine is a very muted green. Does anyone know if food colouring is used to get this vivid shade of green.

It tastes excellent, my neighbour gave it the thumbs up, but my better half says it's no good if it doesn't look vivid green lol lol lol

Real Chi dogs use relish with the Brite Green brand name which we have purchased in MI but could not find in MO. Found basically the very same stuff at Shop 'n Save in STL from the Puckered Pickle Co. that's called Super Green Sweet Pickle Relish. Highly recommended from here!

Thanks. The relish I made from an on line recipe has been a hit at the Farmers Market, in fact one customer called in the house and virtually cleared me out. will be making more next week
