    cast iron easy meal

    total accidental recipe! great for over night and weekend camping. I live on the foot of the appalachian trail so we do a lot of last min over nighters and thats how this was born. great for 4 people. it sounds strange but it is pretty yummy.


    1 small pack of chicken breast strips.
    4tbsp of olive oil
    1packet of mccormick pot roast seasoning
    4 potatoes (sliced into thin rounds)
    1 can of fav. veggies (we use cans of mixed veggies)

    mix oil and pot roast seasoning and add chicken strips. put in ziplock bags or sealed container for transportation.
    heat cast iron. add chicken ( oil and extra seasoning too) and potatoes. cook over open fire low and slow until chicken is falling apart and potatoes are soft. Add can of mixed veggies and cook for another 5 min. serve.


    not the healtiest but very yummy and lots of carbs. if you're doing a good ammount of hiking.

    To make it healthier you can use much less oil, maybe a couple of teaspoons instead, plus rely on using water to help cook the potatoes. Cover the skillet and this will facilitate the cooking of the potatoes. When they are soft, uncover them and get them browned. It will naturally make the chicken tender also when you allow it to cook covered for most of the time. 20 minutes is plenty of time for the potatoes. Use foil if you have no cover for the skillet. Thanks for this recipe. My b/f and I are planning a camping trip this next spring.
