To make 12:
6 Very large baking potatoes
4oz cream cheese
1/2 c Sour cream
1 packet Ranch seasoning
1/2 c shredded cheddar cheese
Bacon bits (to pref.)
olive oil
salt
Instructions:
pre heat oven to 450. Cut ends off of potatoes so they will stand up. Then cut in half ( through width not length). Use a melon baller and scoop out middle of potatoes making sure skins are fairly thin. save center of potatoes! on a foiled cookie sheet line up potato skins lightly oil and salt. Place in oven for 30 min or until about 2/3 cooked.
While skins are in the oven prep filling:
Take the middles you saved from earlier and boil. (like your making mashed potatoes) While potatoes boil soften cream cheese in microwave for about 30 seconds. Add sour cream, ranch, cheddar and bacon bits to softend cream cheese. combine well. once potato centers are cooked completly drain water, add cheese mixture and mash well.
Final stretch:
once skins are crispy "stuff" skins with potato mixture top with cheddar and bacon bits. Bake again for 15-20 min. at 375. Serve
Made these for new years as an experiment and now have been invited to 3 super bowl parties because of them! I hope they turn out well for someone else!
