Thread: " Christmas Cake"

    Red face " Christmas Cake"

    Take 2 boxes of Graham crackers. Crush them til they're finely crushed. Add 3 cans of Eagle brand milk. Add raisins about 4 small (individual size boxes), 2 jars of Marachino cherries cut each cherry into 4 pieces ( do not add the juice) one 12 oz. bag of fresh coconet, one cup of finely chopped walnuts ot pecans. Mix by hand until thoroughly mixed. Spray a square pan or we always reuse the graham cracker boxes and line them with either wax paper or aluminum foil, spray with pan coating such as Pam. Pat into these boxes, press in firmly cover them to keep them from drying out. We usually put into a freezer zip loc bag and take all of the air out of them. Sometimes we double up on the zip lock bags. Keep in refrigerator for at least a week until cold and firm. Will keep for several weeks. They do look like Fruit cakes but taste much better. When ready to serve take out of box and peel wax paper or foil off and cut into sizes that you prefer. This recipe will make 2 cakes about the size of 2 Graham cracker boxes. Easy to make and doesn't take long to make.

    That's interesting and easy. Do you ever add any spices?

    Off subject..........Has anyone seen Food network's iron chef - secret ingredient - alton brown's fruit cake challenge? It's hilarious. fish and fruit cake anyone. You need to see it to believe it.

    I have never added any spices but it might be kind of interesting to try some. Let me know if you do.....this was my mother in laws recipe. It was something that she made each and every Christmas. Actually she called it Refirgerator cake.
