Hi Vcannon and Welcome to TalkFood!

I've frozen all kinds of cookies, including shortbread, with good results. Make sure you pack them carefully, sealing out as much air as possible (a vacuum sealer is best if you have one).
Freeze thoroughly cooled cookies on foil, wax paper, silicone or parchment lined cookie sheets until solid, then seal them. A 0°F freezer will give better results than a 32°F temperature.

If you don't have a vacuum sealer, you can also get good results by packing the frozen cookies between layers of wax paper lined cardboard in boxes.

    Hope this helps!

My recipe has me freezing them first and then bake as needed.
